    the sauce by combining the yoghurt tahini lemon juice garlic Thread the chicken onto skewers and grill on each side until done Remove the chicken from the skewers and put onto 2 plates drizzle with the sauce and serve with romaine wraps Mexican Chicken Burgers Who says burgers have to be beef These spicy chicken burgers make a nice change from regular burgers and are great for BBQs or indoor cooking Recipe serves 2 250g ground chicken 2 spring onions chopped 1 garlic clove crushed 1 beaten egg Handful of chopped fresh coriander 1 tsp ground cumin 1 chopped jalapeno Salt pepper 2 tbsp fresh salsa 1 sliced ripe avocado Romaine leaves Method Combine the chicken spring onions garlic egg ½ of the coriander cumin chili powder salt pepper in a bowl Mix well and shape into 2 burgers then refrigerate for 1 hour Meanwhile mix the salsa avocado rest of the coriander in a bowl Cook the burgers until cooked through and top with the salsa mixture then serve on a romaine leaf I love feta it makes any dish taste amazing and this one is no exception Chicken stuffed with Feta Spinach Bacon Recipe serves 2 2 chicken breast 1 small bag fresh spinach 60g feta cheese 4 rashers bacon dice 2 of them 1 clove crushed garlic Black pepper 1 tbsp oil Method Heat the oil in a frying pan and cook the diced bacon for a few minutes then add the spinach till it reduces Remove the spinach and squeeze out any moisture in kitchen roll Place the chicken breasts in a freezer bag and pound until they are quite flat In a bowl mix the spinach bacon and feta and spread the mixture into one side of the chicken and then fold the other side on top of it Top each stuffed breast with the remaining bacon rashers then bake for 40 minutes until chicken is cooked Serve with a side salad or veggies of your choice This dish is great if you re craving a hearty pasta dish but you don t want the heavy carbs Creamy Mustard Chicken with Penne serves 2 50g Atkins Penne pasta 2 chicken thighs 1 crushed garlic clove Salt pepper 2 tbsp olive oil 1 shallot finely chopped 100ml dry white wine 2 tbsp sour cream 1 tbsp Dijon mustard Handful of fresh chopped sage Method Cook the pasta according to the instructions and drain Meanwhile sprinkle the chicken with crushed garlic and salt pepper Heat the oil in a frying pan and cook the chicken turning once until golden brown and cooked through then transfer to a plate Add the shallot to the oil and cook until brown about 30 seconds Add the wine and cook for 1 minute add water if needed Remove from the heat and stir in the sour cream mustard half the sage and seasoning then return the chicken to the pan and coat with the sauce Top the pasta with half the

    admittedly not very good at baking but I found this really easy to make All you need is 75g almond flour or ground almonds 2 tbsp butter 3 eggs 1 5 tsp baking powder Mix up all the ingredients and bake at 200C for 20 mins Ham cheese are pretty good but you can use whatever sandwich fillings you prefer Each slice is less than 2g carbs and in my opinion tastes better than bread and doesn t leave me feeling bloated I make this the night before and just wrap the sandwich in foil and take to work the next day A tasty salad There s nothing worse than a bowl of limp tasty iceberg lettuce topped with a plain old chicken breast So get creative with your salads A few of my favourites include Greek salad Contains chopped cooked chicken romaine lettuce cherry tomatoes olives feta cheese and chopped cucumber Drizzle with olive oil you can take this in a little Tupperware dish and dress your salad just before eating Salmon salad Salmon is full of healthy fats so try to eat it a few times a week You can pre cook a salmon fillet or just buy tinned if you prefer I like it with romaine lettuce half sliced ripe avocado radishes tomatoes spring onion and a dollop of full fat mayo Lettuce Wraps This is easy to make the night before too by simply cooking together ½ red onion 1 garlic clove 100g minced meat and spices of your choice When cooled place this in a Tupperware dish and then take some romaine leaves and use them as wraps For an even simpler recipe you could mix a tin of tuna in oil or salmon with mayonnaise and use this in the wraps This is even tastier if you chop up spring onions red peppers or other crunchy veg into the mixture Soup Soup is probably one of the easiest dishes to prepare and reheat the next day After your Sunday roast you could even use leftover meat vegetables with some stock to make a soup for Monday lunchtime Or here are a few more low carb ideas http uk mealplanner atkins com atkins recipes view recipe html id 47 http uk mealplanner atkins com atkins recipes view recipe html id 2029 http uk mealplanner atkins com atkins recipes view recipe html id 2041 Cauliflower Wraps These are a great way of having wraps filled with delicious fillings of your choice and increasing your veggie intake at the same time Here s the recipe and this can be made ahead of time so no rushing around in the morning Whisk an egg and ½ grated cauliflower and 1 tsp garlic powder Pour onto greased parchment baking paper and shape into a circle Bake for 10 15 minutes then flip over and cook for another 5 minutes ½ cauliflower makes about 2 3 so use the full cauliflower and double the other ingredients if you wish to

    and other fitness events to get me motivated to keep putting on my running gear and getting out in the cold weather This made me think of the question I m often asked can you exercise effectively when following a low carb diet Can you even train for a marathon or other endurance event without carbo loading for long runs or the actual event itself The answer is yes First foremost if you re an avid exerciser and following or thinking about starting a low carb diet then pick up a copy of The Art Science of Low Carbohydrate Performance by Volek Phinney It s a must read The great news is that research shows that a low carb diet can help you to train harder perform longer and recover faster In fact Tim Noakes an endurance sport expert and marathon runner who wrote The Lore of Running says that a low carb high fat completely changed his life after reading New Atkins New You and he went so far as to tell people to rip out the section about diet from his famous book as he no longer believes in carbo loading for athletes So what about the science In one study elite cyclists ate a low carb diet similar to phase one of Atkins for four weeks You d have thought that their performance would be impaired In fact it wasn t at all and this was because their body s had adapted to burning fat for energy We have a greater store of fat from bodyfat dietary fat we eat so it makes sense that using it as the primary energy source rather than carbs makes us much more efficient when exercising Running on fat metabolism means you ll be less likely to hit the wall during a race or you ll have more energy to lift weights in the gym or in your favourite exercise class Speaking of weight lifting in another study overweight men who followed the Induction phase whilst lifting weights 3 times a week for 12 weeks lost on average 16lbs but their lean muscle increased by 2lbs So you can increase your workout performance and gain muscle at the same time The first few weeks of Atkins may mean you ll feel slightly less energetic during workouts but once your body is adapted to burning fat this is when the energy endurance kicks in So go easy for the first few weeks on Atkins and you ll reap the benefits Although what you eat is more significant than exercise in terms of overall weight loss there are many great reasons to exercise including improving heart health improving your mood and decreasing stress levels and helping you dodge health issues such as stroke type 2 diabetes etc Do you exercise and follow a low carb diet What improvements in performance have you experienced Feel free to let me know on our free online forum http uk atkins com community forums Tweet comments powered
