    d worked in hospitality in Parma moving to London in January 2012 It was a last minute decision and rush to get to the Carluccio s open day but I m glad I made it I joined as Deli Assistant and immediately loved the Italian products and my team Carluccio s offers great opportunities development and training and you can progress as much as you want to you can start as a Deli Assistant like me and become Assistant Manager which has been my most recent promotion I love the staff incentives I recently went on a trip to Italy and fifteen of us spent three fantastic days in Bologna sampling great food and wine helping to pick and press the olives for one of our olive oils It can be hard work but you re well supported and you get masses of satisfaction from guests I love to walk around all the tables to make sure everyone s having a special experience If guests aren t happy it s for a reason even if it s just that they ve had a bad day I see it as an opportunity to engage them more deeply by offering another dish

    I manage my own team and I couldn t be more excited I joined the Graduate Scheme in 2011 and I wasn t expecting to my get my own restaurant yet though I was ready for something to happen I just wasn t sure of what The fact that they saw that I was ready and had belief in my capabilities made me feel confident to take the next jump A previous colleague told me about the Carluccio s Graduate Scheme saying it was the Golden Ticket of training The scheme is exceptionally well thought out with training covering all areas not just kitchen restaurant bar and deli but also the work done at Head Office as well as experiences outside the restaurant environment Visits to Italy mushroom foraging in Essex for the day and working on street food stalls and the Mushroom Fair in Hampstead were instantly appealing Even visiting a trade fair with the Maintenance Manager which to be honest I thought would be dull turned out to be brilliant and taught me a lot I love the freedom Carluccio s gives you to work on special events I have been involved in events such as Opera Evenings

    2011 and within 18 months was running my own central London Carluccio s Getting my own restaurant so soon was a great feeling a bit scary but I d had such great training and support that I was ready for it And when people you respect think you re ready it builds your confidence I studied hospitality at university and looked at every graduate programme out there before deciding to choose this one Even though the other schemes were a minimum of 18 months long I felt that this intensive hands on 6 month scheme offered by far the best and most comprehensive training and development and I think the way I ve been supported and developed confirms that I count my fellow graduates as some of my closest friends One of the best moments of our training was spending a few days in Italy sampling Italian food and drink and soaking up the sunshine culture and atmosphere of Turin I loved it My training also included time spent in a deli bar caffé the Office before working with the restaurant manager at Canary Wharf which gave me a thorough understanding of the business as a whole I m loving

    Bar Team Member Kitchen Team Member Your Training Our stories Apply Now Get in Touch How much you put in is what you get out Iain Head Chef Iain In my kitchen we can serve 1100 covers on a busy Saturday we might have 40 50 checks on each with 2 10 dishes on it all of which are cooked from fresh so it s high pressure quick turnaround stuff Communication is key to getting everyone working as an efficient team I often lose my voice I get lots of satisfaction from developing my staff My Sous Chef was a Kitchen Porter 3 years ago and I taught him the basics of cooking plus all the other things he needed to know now he s about to run his own kitchen That s really rewarding I ve been at Carluccio s for 3 years as Head Chef and there s always been a potential for progression and development I ve recently been helping with our Cook School at Westminster College taking our Team Members back to basics to not only give them a great foundation for working in a busy kitchen but also enable them to gain an NVQ qualification

    That was great not only because I was being recognised for being good at the work that I love to do but also knowing that someone really believed in me and had taken the time and effort to mentor me so that I could move up in my career One of my favourite experiences so far has been attending our Cook School at Westminster Kingsway College Ten of us went along once a week for 12 weeks receiving training in all the cookery basics and also learning more about shellfish and how to make pasta And at the practical assessment on the last day I came top of the class I was so happy and really proud of myself The whole thing was rounded off with Cook School Dinner which is designed to show off everything you learn over the 12 weeks of the course I found it exciting and a bit nerve wracking to cook for managers from the restaurants and from head office who d come along to support us and celebrate the fact that all ten of us chefs had passed Cook School and gained our qualifications It really made me appreciate how lucky I am to

    Our stories Apply Now Get in Touch I u2019m so happy that I get to work with our great deli teams throughout the UK Libby Deli Manager Libby Ten years ago I joined Carluccio s as a Deli Assistant in Bicester Things went well and after a short time I was promoted to Roving Delicatessen Manager moving between restaurants to oversee the work of the deli team I m so happy that I get to work with our great deli teams throughout the UK and I like the fact that my week could start in Canary Wharf and end in Nottingham I host our cooking classes as well such as Baci dei Dama making for children and my favourite our Risotto making class and these are great fun Everyone else obviously enjoys them too we started off just a few years ago with 50 classes and now it s in the hundreds I m lucky enough to be one of the chaperones on the food trips to Italy so I get to experience how the products are made and see the love and care that our specialist producers pour into making them I also get to enjoy the culture and
