    I ve been looking at some of the different ways you can maximise the lovely sausage flavour while making the sausages go further These sausage stretchers will save you money and be healthier too Make this tonight Chunky sausage bean bake This easy all in together dinner is savoury and warming It makes 6 sausages seem like a lot and the flavours will appeal to all ages 6 good quality sausages 4 floury or all purpose potatoes scrubbed and cut in chunks 1 red capsicum sliced 3 medium carrots peeled and cut in thick batons 1 400g can chilli beans 1 400g can chopped tomatoes Pre heat the oven to 220 Brown the sausages in a roasting pan in the oven then remove and pour off excess fat Set the sausages aside While the sausages are browning bring the potatoes to the boil in salted water and boil them for 3 minutes Drain and return them to the saucepan over the heat to dry off for a minute Place the potatoes into the sausagey roasting pan add the carrots and capsicum and return to the oven Cook turning from time to time until the potatoes start to brown Slice the

  • Omelettes are as easy as 1, 2, 3 | Destitute Gourmet
    long way Follow these 3 easy steps to master a basic omelette then try adding a little grated cheese some ham or tomato or a few sliced mushrooms for a café quality meal in minutes For each person 2 eggs 2 tablespoons of water 1 tablespoon of butter or oil Salt and pepper to taste 1 Break the eggs into a bowl and whisk together with the salt and pepper and water In a frying pan heat the butter or oil until bubbling hot but not smoking 2 Pour in the egg mixture and use a spatula to push the mixture towards the centre of the pan Tilt the pan to allow runny egg to fill the spaces you have made Continue pushing the set egg to the middle and filling the space with runny egg until the mixture is no longer runny This takes less than a minute 3 Fold one side of the omelette over the other and flip or slide the omelette onto the plate Cooks tip Once you ve mastered the basic omelette add your desired fillings or flavourings before folding the omelette If you are right handed add the fillings to the left side and

    All Recipes Chilli bean and potato bake Next Previous This sturdy filling spicy bean bake is ideal on a cold night it its great flat food as it s cheap tasty and meat and non meat eaters alike will enjoy it Serves 6 4 medium potatoes scrubbed and cut in 1 cm slices 1 onion chopped 1 tsp oil 2 cloves garlic chopped 1 can chilli beans in sauce approx 425 g 1 can baked beans approx 435 g 1 can chopped tomatoes 400 g ½ tsp sugar 90 g grated Edam cheese Preheat oven to 200 Place the potato slices in a saucepan of cold water and bring to the boil Ensure that the slices are not stuck to each other and boil them gently for 4 5 minutes they should be beginning to cook but still hold their shape if some break its not a disaster Drain them gently and set aside While the potatoes are cooking prepare the chilli bean filling In a large pan sauté the onion and garlic until soft Add the chopped tomatoes and both cans of beans Mix well and simmer vigorously for 5 minutes stirring frequently Spoon ¼ of the bean mixture into the bottom of a 1 5 litre oven proof dish Arrange 1 3 of the potato slices in a layer over the top Continue to layer the bean sauce and potato in this manner finishing with a layer of bean mixture Top with the grated cheese and bake in the preheated oven for 30 minutes after 15 minutes prick the dish all over with a fork to allow the heat and sauce to circulate and return to the oven for the remaining 15 minutes Serve with a crisp green salad when in season or some steamed vegetables Stay Connected

  • Fried Rice | Destitute Gourmet
    it in the morning and leave in the fridge till evening Fresh rice becomes sticky and wont fry This meal takes only minutes to prepare and not much longer to cook so it s a great weeknight standby Serves 4 2 cups of long grain white rice cook and leave for 8 hours or overnight 2 tbsp sesame oil 3 eggs 3 rashers of bacon or a finely sliced ham steak a cup of shrimps beef schnitzel pork mince whatever meat you have to hand 1 tsp chicken stock powder dissolved in ½ cup water 2 tbsp dark soy sauce ½ tsp salt Cooking spray 1 ½ cups frozen mixed vegetables peas or finely diced fresh veg 1 Spray the inside of a Wok or large frying pan with cooking spray Add a teaspoon of the sesame oil and heat Break the eggs into a bowl and whisk lightly When the oil is hot pour the eggs into the pan tipping it to spread them out into a thin pancake Cook until the eggs are set then lift the pancake out roll it up and set it aside 2 Add another few drops of the oil to the pan and add the bacon or whatever meat you are using Stir fry till cooked then add some more oil and the rice Stir frequently being sure to scrape the base of the pan to prevent sticking When some of the rice is starting to crisp a little mix in the soy sauce salt and stock and continue to cook 3 Add the vegetables and continue to stir fry until they are piping hot Finely slice the egg pancake and scatter into the pan Cooks tip If using shrimps or other seafood cook lightly and then remove from pan return them to

    weeknight supper If you don t have penne then substitute with another pasta and broccoli can take the place of asparagus when the season is over 2 bunches of asparagus cut into short lengths 1 cup baby peas or broad beans 2 cloves garlic crushed ½ tbsp olive oil 200 g reduced fat ricotta 1 tbsp grated parmesan cheese 1 handful fresh chopped parsley Penne for 4 people 1 3 1 2 cup pasta cooking water Salt and pepper Bring a large pot of water to the boil and blanch the asparagus and peas for around 3 minutes depending on the thickness of the asparagus it should be tender crisp not tough or soggy and stringy Use a sieve to fish the veg out of the water and set aside Salt the water never mind that it looks a little green pour in the pasta and cook until done Reserve ½ a cup of the pasta water then drain the pasta Return the pan to the heat and add the oil Cook the garlic till soft then toss in the drained vegetables pasta and ricotta adding enough of the pasta water to form a creamy sauce that just coats the

    g of beef mince into a hearty family meal The robust Italian flavour appeals to a wide range of diners and the cheesy topping can be enriched with addition grated cheese or a handful of parmesan if you budget allows Serves 4 6 300 g lean beef mince 1 onion chopped 2 cloves garlic chopped 1 capsicum bell pepper de seeded and chopped 1 800g can chopped tomatoes 1 tsp mixed herbs ½ tsp oregano 1 tsp Worcestershire sauce 2 tbsp Tomato paste 1 tsp beef stock powder 1 tbsp brown sugar 1 tbsp corn flour 1 tbsp water 200 g 2 heaped cups dried pasta macaroni penne shells 1 tbsp butter or oil 1 heaped tbsp pl flour 1 cup milk ¼ cup grated cheese Brown the mince in frying pan Add the chopped onion garlic and capsicum and continue cooking until the vegetables are soft Pour in the tinned tomatoes tomato paste herbs stock sugar and Worcestershire sauce and simmer for 10 15 minutes While the sauce is simmering cook the pasta in boiling salted water according to the packet directions and assemble the cheese sauce Melt the butter or oil is a small saucepan turn the heat to low and stir in the flour Mix well and then using a whisk gradually add the milk a little at a time stirring continuously to create a smooth lump free sauce when all the milk is added swap the whisk for a wooden spoon and stir the sauce continuously until it begins to thicken Do not allow it to boil When the sauce will coat the back of a spoon stir in the grated cheese mix well and set aside Drain the pasta and stir into the meat sauce place in a heat proof dish and smooth over the

    one pan Next Previous One pan dishes are a godsend on a busy weeknight and this is a family friendly flavour combination is likely to become a staple 400g trim pork mince 1 tsp fresh grated ginger 2 cloves garlic crushed 1 finely chopped fresh red chilli or dried chilli flakes to your own taste 2 carrots peeled cut longwise and then sliced diagonally in thin slices 3 tbsp kechap manis sweet soy sauce 2 tbsp dark soy sauce ¼ cup or approx 4 tbsp crunchy peanut butter 1¼ cups jasmine rice 3 cups chicken stock made from stock powder 3 cups green vegetables fresh broccoli flowrettes frozen beans asparagus snow peas or a combination of fresh and frozen veg Optional chopped coriander leaves a handful of chopped peanuts and a squeeze of lime juice In a frying brown the mince I don t find it necessary to use any oil to do this press it with a fork or potato masher as it cooks to crumble it When the mince is starting to brown add the chilli garlic ginger and sliced carrots Then stir in the peanut butter kechap manis and soy sauce You can add more chilli at the end when you taste the dish just prior to serving Stir in the chicken stock and rice and mix well to distribute the peanut butter throughout the mixture If using fresh vegetables such as broccoli or asparagus add it to the pan now Frozen veg can be added just before serving as they only require a couple of minutes to cook Simmer the mixture gently stirring from time to time around 10 15 minutes until the rice has absorbed all the liquid and the vegetables are cooked through Serve topped with fresh chopped coriander peanuts and a squeeze of

  • Red Lentil Bolognaise | Destitute Gourmet
    veg lasagne or spread over a pizza base You can use this recipe as a meat extender the details are below 1 mug of red lentils uncooked 2 tbsp oil 1 onion chopped 2 cloves garlic chopped 2 400g tins chopped tomatoes 2 tbsp tomato paste 1 tsp sugar 2 tbsp Basil pesto or a pinch of mixed herbs and a pinch of basil add more or less to your taste Salt and pepper Bring a large saucepan of water to the boil Pour in the lentils and stir to ensure they do not stick to the base of the saucepan Boil the lentils for 8 10 min or until soft Heat the oil in a medium pan and sauté the onion and garlic until soft Add the tomatoes tomato paste sugar and herbs then stir in the lentils Season with salt and pepper to taste and simmer until flavours develop around 15 minutes Red lentils blend easily with beef mince To use the lentils as a meat extender allow around ½ cup of lentils per 500 g mince Cook the lentils in boiling water as outlined above In a medium size pan brown the meat add the onion and
