    or chocolate play around and develop your own favourites 2 cups self raising flour ½ tsp baking powder 1 cup sugar 100g butter melted 1 egg 1 cup milk Optional extras 1 tsp of mixed spice 1 tsp vanilla essence 1 cup mashed banana 1 cup berries ¼ cup lemon juice ½ cup chocolate chips Preheat the oven to 200 C Grease muffin pans or mini muffin pans or if using paper muffin cups spray them with non stick spray or they will be impossible to peel off In a large bowl combine the flour baking powder sugar and any dried spices berries or chocolate nuts or other bits you may be adding Combine the butter milk and egg and whisk with a fork to combine If including mashed banana or vanilla juices or yogurt add them now Keep track of how much extra liquid you include and deduct that quantity from the amount of milk Example if including ½ a cup of passion fruit yoghurt use only ½ a cup of milk Mix the liquids into the dry ingredients till just mixed Do not beat Quickly spoon the mixture into prepared pan and place in the oven Bake for

  • Minestrone Soup | Destitute Gourmet
    stalks celery finely chopped around a cup full 1 leek quartered longwise and finely chopped 2 courgettes quartered longwise and chopped ½ red capsicum finely chopped 2 carrots finely peeled and finely chopped 2 rashers of bacon with the fat removed chopped 2 400g cans chopped tomatoes 4 cups chicken stock 1 tsp sugar 1 420g can white beans Cannelini butter beans haricot beans 1 3 cup soup pasta risoni alphabets tiny macaroni whatever you can find Handful of chopped parsley Salt and pepper Heat the oil in a large saucepan and toss in the onion garlic celery and leek and stir until beginning to soften Add the bacon cook for two more minutes Add the other vegetables and cook over a gentle heat for around 10 minutes stirring frequently until vegetables begin to soften Add the tomatoes stock sugar salt and pepper and simmer for 10 minutes if you like your soup vegetables very soft cook them longer but I like them to retain their texture When the vegetables are tender add the beans pasta and parsley and simmer a further 10 minutes stirring frequently to prevent the pasta from sticking to the base of the pan Taste and

  • Crispy Bacon wrapped pork loaf | Destitute Gourmet
    hot in thick slices with roast vegetables or cold with salads and chutney It has a lovely savoury flavour that appeals to diners of all ages which makes it a good choice for family get togethers Serves 4 6 Pre heat oven to 200 C 2 tbsp oil 1 medium onion chopped 2 cloves garlic crushed 4 slices bread 1 egg ¼ cup milk 1 tsp salt ¼ tsp black pepper 1 tsp mustard powder or wholegrain mustard 1 2 tsp dried sage 500 g pork mince 4 6 rashers of bacon with the rind removed Sauté the onions and garlic in the oil till soft and set aside In a large bowl tear the bread slices into pieces and add the egg salt pepper milk mustard and sage onions and garlic Mix with a fork till soft and mushy Stir in the pork mince Lay a sheet of foil on the bench and arrange the bacon slices side by side Scoop the pork mixture along the middle of the bacon row and shape it into a log Lift the sides of the foil and wrap them around the log so the bacon encloses the sides of the loaf but not the bottom Shape into a loaf by smoothing the sides with the foil still wrapped around Place in a shallow baking dish and remove foil The foil is only to help wrap the bacon around the loaf and shape it Wash the foil carefully and reuse it for something else Bake the Loaf at 200 C for 40 minutes or until juices run clear when pierced with a fork This is totally delicious served hot in slices with roast vegetables and when cold sliced very thin it will make the most excellent sandwiches For guests you could shape little

  • Malaysian beef curry | Destitute Gourmet
    store these in the freezer till needed 1 tbsp grated ginger ½ an onion 1 ½ tsp coriander 1 ½ tsp cumin ½ tsp dried chilli flakes 1 tbsp oil 2 tbsp water For the curry 400 g beef schnitzel 1 tbsp oil 2 potatoes scrubbed and cubed 2 tsp beef stock powder 1 cup hot water 1 tbsp kechap manis sweet soy sauce 165 ml coconut cream 1 cup green beans 1 tbsp cornflour and 1 tbsp water To make the marinade paste combine all the marinade ingredients in a processor or blend with a stick blender Scrape the bowl down frequently and process until the mixture forms a paste Slice the schnitzel thinly into strips and coat in the marinade Set aside for at least 15 minutes or leave in the fridge for several hours Heat the oil in a frying pan and fry the paste coated meat in small batches until it is all sealed Return all the meat to the pan and add the diced potato beef stock and water and simmer for 10 minutes or until the potato pieces are tender Stir in the coconut cream Kechap Manis and green beans and heat through Thicken

  • Chicken stew with dumplings | Destitute Gourmet
    boneless breast cooked It doesn t take long to make and is good and filling Serves 4 1½ cups cooked chicken 1 tsp oil 2 stalks celery chopped 1 onion chopped 1 2 small chorizo sliced or chopped 1 litre of chicken stock 1 cup kumara or sweet potato diced ½ tsp mixed herbs 1½ cups 1 x 400g can cannellini beans or other beans such as kidney or butter beans 1 tbsp corn flour For the Dumplings 120g Self raising flour 50g butter or non dairy spread Pinch of salt 1 tsp mixed herbs Scant 1 3 cup water to mix Heat the oil in a saucepan and sauté the onion celery and carrot Add the Chorizo stock and herbs and simmer until veg are tender crisp Stir in the Kumara and cooked chicken and season with salt and pepper Continue cooking until the vegetables are soft To make the dumplings combine the flour salt and herbs in a bowl or processor then rub the fat into the flour Stir in the water to make a soft dough Divide the mixture into 12 balls they ll swell a lot as they cook Stir the beans into the chicken mixture then pop in the dumplings spooning mixture over the top of them to submerge them Simmer gently for 10 minutes or until dumplings are puffed up and piping hot Mix the corn flour with a drop of cold water and stir it in to thicken the gravy Serve with vegetables Cooks tip If you don t have chorizo a spicy Spanish style sausage flavoured with chilli and paprika you could use a little chopped bacon for extra flavour Gluten free You could make this without the dumplings Reduce the liquid so there is just enough for a good gravy and

    their prices with you local supermarkets Ask if you get a discount if you buy several kilos at a time Determine whether you want skin off or skin on the price per kg usually works out the same skin off is healthier but requires careful cooking if you are roasting Freeze individually wrapped chicken breasts so you can pull out as many or few as you need Make this tonight Magic Chicken Pies These pies are magic because they make a little bit of chicken go such a long way 1 single chicken breast cooked or equivalent quantity of left over s shredded 25 g butter 1 leek sliced A handful of mushrooms about 5 sliced 2 tbsp Pl flour 250 ml milk 300 g cooked potato cut into small cubes 1 tsp Thyme Around 400g pastry can be homemade or frozen puff flaky or short crust Salt and Pepper 1 beaten egg Preheat oven to 200 Sauté the leeks and mushrooms in the butter till soft stir in the flour and gradually add the milk until a thick sauce is formed Add the looked potato thyme and the shredded chicken Season with salt and pepper and allow to cool Grease a regular 12 cup muffin pan with cooking spray Line muffin pans with pastry see cooks tip Press the pastry in gently re rolling the pastry until all the pans are lined save trimmings Spoon in the chicken filling Using the pastry trimmings cut strips of pastry 4 for each pie and lattice the pastry strips on the top of each pie You will need to dab a little cold water onto the ends of the pastry strips and press them down firmly so they don t pop up as the pastry cooks Brush lightly with beaten egg and

    the number of people you are serving 3 good quality meat sausages nice herby or spicy ones work well 2 cloves garlic crushed 3 eggs 2 egg yolks ½ cup grated parmesan cheese ¼ 1 2 cup pasta cooking water Several handfuls fresh chopped parsley Cook the pasta according to the packet directions While the pasta is cooking you can make the sauce Heat a medium saucepan or frying pan and squeeze the sausage meat from the sausage casings Sausages usually contain fat so you shouldn t need any oil Discard the casings and fry the sausage meat crumbling it as it cooks Add the crushed garlic and when it is soft set aside the pan aside Beat the eggs and egg yolks together and stir in the parmesan cheese When the pasta is cooked drain it reserving ½ cup of the pasta cooking water Pour the drained pasta into the pan with the cooked sausage add the egg mixture and enough of the hot pasta water to create a creamy sauce Stir gently until the pasta is coated taking care not to scramble the eggs Stir in the chopped parsley and serve Try this 5 sausages 6 people Make a sausage casserole brown 5 sausages under the grill and slice into chunks Cook a diced kumara or sweet potato and a couple of carrots and a rasher or two of bacon Place all together in a casserole dish Add a can of mushroom soup and heat through in the oven Serve with mashed spuds and plenty of green veg 4 sausages 6 people this recipe originated with dietician Bronwyn King I ve made it loads of times It s easy tasty and healthier than most sausage casseroles Brown the sausages under the grill Sauté carrots 2 sliced carrots a
