    chef and restaurateur LeVine Everything I can t imagine doing anything else I also find great joy in watching my restaurant family go above and beyond to facilitate a great dining experience to every guest FDI How do you think your background has helped shape you into the chef you are today LeVine I truly believe that coming from nothing and having to fight for everything gave me a very good foundation to build on In the kitchen you have to work hard and always strive to perfect the craft of food and customer experience The passion for people comes naturally and from an early point in my childhood where my grandmother always shoed me the good side of people At the end of the day my childhood and passion for food and people is a result of the crazy childhood I had FDI Describe your cooking style LeVine I don t have a style of cooking Every moment is special and every dish is unique I will say I pull from my experiences working with some of the best culinary experts in Asian Italian French and regional American cuisine One common denominator is for each dish I create I try to source the best ingredients preferably local when available and let the natural flavors speak for themselves FDI What trends or market changes are you noticing LeVine The market has flipped in a strange way Customers have many more choices often going to the fast casual quick fix instead of an experience I don t think I have ever seen the customer base drive the market so strongly I believe people are missing the great simple dining experiences by eating in fast food places and fast casuals That being said there are a few doing fast casual really well It s a space I am exploring now FDI What advice do you have for adapting to change LeVine Stop playing checkers and start playing chess by the late great Mike Roman founder of Catersource On the Menu FDI Tell us about the importance of vegan vegetarian and gluten free menu options LeVine Vegan and vegetarian options are an integral part of my menus and menu development I went vegan for a while and it was the greatest worst experience of my life Going to dinner was the worst All that was offered was steamed vegetables and rice or pasta with vegetables and marinara I didn t want my vegan customers experiencing the same thing So I developed constant changing vegan items as one of the foundations of my menus all the time FDI What does a sophisticated beverage menu mean and how do you include that in your restaurants LeVine The term in my mind reaches back to classics that have been twisted to become more updated We choose selective new spirits such as Hudson whiskey and create cocktails that will conform and enhance our craft experience The Future of Food FDI What predictions do you have for the
