    to be complicated to be fulfilling Here s one of my easiest a hearty summer pasta salad that uses fat free Italian dressing whole grain pasta and plenty of vegetables It s virtually fat free and the more fresh vegetables you use the more appealing it will be I like to make it as a side dish for dinner it goes nicely with grilled chicken and then eat the leftovers for lunch for the remainder of the week Feel free to substitute the vegetables you have on hand for the carrots celery and peppers below this is a great flexible recipe to use up leftover veggies Healthy Summer Pasta Salad ratingval from reviews reviews Print Recipe Type Summer Pasta Salad Author Kristin Harmel Prep time 15 mins Cook time 15 mins Total time 30 mins Serves 6 Super easy and healthy Summer pasta salad Ingredients 16 ounce package whole grain pasta such as rotini or penne 14 5 ounce can diced tomatoes drained 1 cup chopped celery 1 cup shredded carrot 1 cup diced red and yellow bell peppers 1 2 cup sliced black olives optional 8 ounces fat free Italian dressing I like Kraft Free Italian Salt and freshly ground black pepper to taste Instructions Cook pasta according to package directions Drain and rinse immediately with cold water until cool Drain and pour into large mixing bowl Toss drained tomatoes celery carrots peppers and olives if using with cold pasta Add fat free dressing and mix well Sprinkle with salt and pepper to taste Notes Optional add ins diced salami diced mozzarella diced cucumber diced red onion edamame broccoli florets peas grated Parmesan cheese WordPress Recipe Plugin and Microformatting by EasyRecipe 2 2 6 This entry was posted in Foodie Fridays General Bookmark the permalink Memorial Day Travel Finger

  • Foodie Fridays: Creamy Polenta with Mascarpone and Toasted Almonds | KristinHarmel.com
    found near the flour 4 cups chicken broth 4 ounces mascarpone cheese it s like a sweet cream cheese often found in 8 ounce tubs in the specialty cheese section 4 ounces slivered or sliced almonds toasted Cooking spray ½ can of sweet corn drained Directions In a saucepan over medium high heat melt butter then saute onions for 3 minutes Add garlic and saute another two minutes Add chicken broth and bring to a boil Pour contents of saucepan into slow cooker Slowly and in a steady stream pour corn meal into broth mixture whisking constantly with a balloon whisk or a fork to avoid lumps Set slow cooker on high For the first 90 minutes give it a quick stir with a wooden spoon every 15 20 minutes This isn t completely necessary but it will help eliminate lumps After 90 minutes turn slow cooker to low Continue to cook for 5 6 hours stirring occasionally if you think of it If consistency begins to become doughy add a few tablespoons of warm water and stir thoroughly it should feel look no thicker than mush or grits If you re not ready to serve after 5 6 hours turn your slow cooker to warm for up to two additional hours Turn it back to low 25 minutes before serving If polenta is very lumpy you can break up some of the lumps using a hand mixer on low speed Wear a potholder and beware of splashes the polenta will be hot 30 minutes before serving spray a frying pan with cooking spray and set it on medium high heat Lay the ½ can of drained sweet corn kernels out in a single layer in the frying pan Cook until they start to brown slightly but not burn flipping

    in four different cities in two days Choose where you re going explain and apologize to the others and move on If you spread yourself too thin you ll have a miserable holiday If you re flying pack light and carry on if you can The U S Postal Service is actually quite inexpensive if you plan ahead it s much better to buy your gifts and ship them to your destination ahead of time Ditto for shipping presents back home Otherwise you might waste valuable time waiting for your baggage to come off the carousel and most airlines charge a fee for checked bags anyhow with the notable exceptions of Jet Blue and Southwest And remember all the quick through the airport rules No bottles over 3 ounces everything liquid must fit in a quart sized zip top bag wear shoes that are easy to take on and off Carry your coat on pack no more than two pairs of shoes two pairs of pants three shirts and a dress or skirt The more you pare down the easier it will be to get ready and to get from place to place If you re driving start off with a full tank pack snacks and drinks such as baby carrots chips cookies water or a thermos of coffee bring entertainment a playlist an audiobook DVDs for backseat passengers etc and have a traffic app like Beat the Traffic handy on your smartphone to avoid traffic jams Looking for a fun way to pass the time as a family in the car This list from Disney and FamilyFun com might just make your road trip fun Before you hit the road for the holidays don t be afraid to give yourself a bit of R R Christmas is still a couple weeks away and my house looks like Santa s workshop gone wrong It s filled with books toys gifts wrapping paper and a to do list a mile long For me being at home this time of year isn t necessarily going to be relaxing If you re anything like me this is a great time to plan a staycation Why now Why stay cate when you have a ton of travel coming up Because it s cheap it s easy and it will help you maintain your sanity And darn it don t you deserve a gift for yourself First of all figure out what s most relaxing or refreshing for you and plan around that It doesn t have to be an expensive weekend you can stay one night in a hotel and do something you love without breaking a hundred dollars Find a great hotel rate with Priceline or Hotwire On Priceline you can bid for the possibility of 60 percent savings or go for an Express Deal which is up to 45 percent off the standard rate On Hotwire the equivalent is the Secret Hot Rate you pay for a hotel of a certain star
