  • Foodie Fridays: 60-Second Brown Rice Salad | KristinHarmel.com
    t have them on hand some chopped up green onions and celery a dash of balsamic vinegar a dash of extra virgin olive oil and some sea salt and freshly ground pepper Voila a perfect hearty summer salad in less than 60 seconds It got me thinking about getting creative with leftovers What else can you create from the ingredients you have lying around Pasta and rice are great bases for creative vinaigrette based salads as are the frozen veggies especially peas and corn you probably have in your freezer and cans of beans especially garbanzo that you may have in your pantry I like the combination of a base rice pasta or beans with something sweet such as dried cranberries fresh sliced grapes or diced strawberries something tangy balsamic vinegar and something crunchy sunflower seeds cucumbers almonds celebry red onions etc Spinach Italian parsley and cilantro or basil would make great flavorful colorful additions too Check out your fridge freezer and pantry and see what you can throw together I d love to hear your ideas This entry was posted in General Bookmark the permalink Foodie Fridays Low Fat Banana Muffins Announcing my new novel The Blue Hour 2 Responses to Foodie Fridays 60 Second Brown Rice Salad JDerek says August 12 2010 at 6 00 pm Very interesting Can t say I ve ever seen a parsley based salad probably a bit too sophisticated for the likes of this country gal Heidi says August 18 2010 at 3 27 am Though I m a writer and we met briefly August 6th at FWA UNF conference I m a sous chef by trade I m also health conscious Every other week I fill a green bag at our local produce market and create food for the whole week I

    into the AC business I hadn t seen him in 13 years and he lives 90 minutes away Yet he offered to come take a look at my unit for me the next time he was in Orlando He couldn t figure out the problem immediately but he promised he d think about it And think he did he returned yesterday cut open one of the pipes and found that it had entirely calcified inside which is why it wasn t allowing any water through It took him less than an hour to replace the PVC piping leading out of the unit And fingers crossed miraculously the air conditioner appears to be working perfectly once again The kindness of a friend seems to have literally saved me 3 000 or more The reason I m telling you all this is because it made my heart absolutely swell in appreciation There was nothing in it for Chris it was difficult to persuade him to take even a little payment for his great work He did this fully out of the goodness of his heart for someone he hadn t talked to in a decade simply because he s a good guy and he knew I needed help His good deed has really inspired me Wouldn t the world be a better place if we all went a little out of our way to help people Not only did Chris save my air conditioner and my wallet but he also helped remind me of the power of doing good It s a favor I won t soon forget And it makes me want to be a kinder more generous person too If you have a good deed you d like to share I d love to hear it Let me know here
